Why styled video titles are usually a mistake
The video title is the single strongest text signal YouTube has for matching your video to a search query, and it is also what appears in Google results. Styled characters are not the query characters, so a styled title forfeits both.
There is a narrower use that does work: a single styled word or bracket as a visual marker at the end of a title that is otherwise plain and keyword-accurate. Channel names carry less search weight and are a safer place to style.
